The scene you're describing is one of the notorious "missing scenes" from Bogus Journey. The ugly dude is a guard who is basically there to give Bill & Ted their sledgehammers. He pulls the rat out of his mouth to scare them and instead they're impressed, thus Ted makes the comment "We totally knew a guy who got one of those in his bucket of chicken!" (A reference to an urban legend about people finding fried rats in take-out food). Major edits were made to Bogus Journey before it got to theaters, including a scene in which evil Bill & Ted totally trash the apartment (worse than what you see in the final print!) and another in which the Two Great Ones face their fears before reaching the Battle of the Bands. The rat scene must have been cut just before the movie was released so the scene was left in the trailer! We'll eventually be putting together an extensive section for this website about all the missing and changed scenes from both Excellent Adventure and Bogus Journey, so keep checking back, babes and dudes!
